Fish Florentine

Ingredients
50g Butter
250g Button Mushrooms, sliced
50ml Flour
250ml Milk
300g Spinach, cooked & chopped
Salt & Pepper
Pinch of grated Nutmeg
45ml Olive Oil
500g Fish Fillets
250ml Cheese, grated
1 tsp Honey
Method
Fry mushrooms in butter until soft
Stir in flour and cook for a minute
Add milk gradually and keep stirring until mixture thickens
Add spinach and honey and season with salt, pepper & nutmeg
Fry fillets in oil until cooked
Arrange fillets in an oven-proof casserole dish and spoon over sauce
Sprinkle with grated cheese and place under grill until cheese is golden brown
Great served with mashed potato
