Fish Florentine

Ingredients
  • 50g Butter

  • 250g Button Mushrooms, sliced

  • 50ml Flour

  • 250ml Milk

  • 300g Spinach, cooked & chopped

  • Salt & Pepper

  • Pinch of grated Nutmeg

  • 45ml Olive Oil

  • 500g Fish Fillets

  • 250ml Cheese, grated

  • 1 tsp Honey

Method
  1. Fry mushrooms in butter until soft

  2. Stir in flour and cook for a minute

  3. Add milk gradually and keep stirring until mixture thickens

  4. Add spinach and honey and season with salt, pepper & nutmeg

  5. Fry fillets in oil until cooked

  6. Arrange fillets in an oven-proof casserole dish and spoon over sauce

  7. Sprinkle with grated cheese and place under grill until cheese is golden brown

  8. Great served with mashed potato
