Kransekake

Traditional Norwegian cake often served at Christmas. We use a special set of baking tins that produce all the rings necessary. Good luck if you don't have these...
Ingredients
500g ground almonds
500g icing sugar
4 egg whites
Method
Beat eggs a little (mustn't get foamy)
Gradually add icing sugar and ground almond, work the dough until it is pliable and keep in the fridge over night
Spay the cake forms with Spray 'n Cook or use butter, then dust with flour.
Form the dough into rolls approximately the size of your finger and place into the forms
Bake for 20 to 25 minutes at 150°C in the middle of the oven, or until lightly coloured
The dough must cool slightly before removing from the form, however it mustn't get too cold otherwise it will become too brittle and break.
