Roasted Butternut Soup

Savanna's Roasted Butternut Soup

Ingredients
  • 1 large Butternut, cut into 2cm chunks

  • 200g Bacon, chopped

  • 900ml Chicken Stock (4 cubes)

  • 4cm Ginger, grated or finely chopped

  • 4 Onions, sliced

  • 5 cloves Garlic, chopped finely

  • Nutmeg, to taste

  • 3 small Chillies

  • Olive oil and fat dripping

Method
  1. Mix oil/fat and butternut in a roasting pan and roast at 180°C for about 1 hour (or until it starts to brown slightly)

  2. Meanwhile fry bacon until fat renders

  3. Add onions and fry until soft

  4. Add ginger, chillies and garlic and fry for 5 minutes

  5. Add stock and bring to the boil

  6. Simmer until the butternut is ready

  7. Add butternut and use a stick blender to blend the mixture

  8. Add nutmeg to taste
