Rosolli & Rosollin Kastike

Traditional Finnish Christmas dish that we had with Lasse & Kirsi (December 2012). Lovely with fish.

Ingredients
  • 3 potatoes

  • 3 carrots

  • 4 beetroots

  • 1 sweet gherkin

  • 2 tart apples

  • 1 onion

  • Salt & pepper to taste


Kastike (Sauce)

  • 200ml heavy cream

  • 1 tsp white vinegar

  • 2 tsp pickled beet juice

  • ½ tsp sugar

  • Salt & pepper to taste

Method
  • Boil beetroots, carrots and potatoes in separate pots, in their skins, until just cooked. Let cool, peel and chop

  • Chop gherkin and apples

  • Mince onion

  • Mix together all ingredients and season


Kastike

  • whip cream until thickened, but not be stiff

  • Mix in the rest of the ingredients

  • Serve on the side
