Rosolli & Rosollin Kastike

Traditional Finnish Christmas dish that we had with Lasse & Kirsi (December 2012). Lovely with fish.
Ingredients
3 potatoes
3 carrots
4 beetroots
1 sweet gherkin
2 tart apples
1 onion
Salt & pepper to taste
Kastike (Sauce)
200ml heavy cream
1 tsp white vinegar
2 tsp pickled beet juice
½ tsp sugar
Salt & pepper to taste
Method
Boil beetroots, carrots and potatoes in separate pots, in their skins, until just cooked. Let cool, peel and chop
Chop gherkin and apples
Mince onion
Mix together all ingredients and season
Kastike
whip cream until thickened, but not be stiff
Mix in the rest of the ingredients
Serve on the side
