Banana Bread
Adapted from an old recipe book for kids (from my folks). Can't remember the name of it...

Delicious recipe for left-over bananas. It also works extremely well for muffins.
Ingredients
2 cups Flour
110g Butter
2 Eggs
3 to 4 ripe Bananas, mashed
1 cup Sugar
1 heaped tsp Baking Powder
1 tsp Bicarbonate of Soda
1 tsp Vanilla Essence
Pinch of Salt
Method
Cream the butter and sugar in a food processor
Add mashed bananas, eggs and Vanilla Essence and beat well
Slowly mix in flour, Baking Powder, Bicarb and salt
Bake loaf at 180°C for 1 hour or muffins for 10 to 20 minutes, depending on size
Notes
If you have some old bananas that are turning black, put them in the freezer and defrost them later for this recipe. They will come out very mushy, but perfect for banana bread. Microwave them from frozen for about 30 seconds on high (in their skins).
