Beetroot Salad

Omi's Beetroot Salad
Ingredients
Beetroot
Onions, finely sliced into rings
Boiling water
White Wine Vinegar
Sugar
Vegetable oil
Method
Boil as many beetroot as you like (normally a pot full) without topping & tailing them as they bleed
When the beetroot is cooked, peel under running cold water while still hot
Slice into the large bowl
Cover the beetroot & onions with boiling water & white wine vinegar, about 2:1
Sweeten to taste with sugar
When the taste is right add 2 to 3 tbsp of vegetable oil
