Butternut, Bacon and Pine Nut Salad

Ingredients
1 Butternut
2 Red Onions, peeled and cut into wedges
125g Bacon
60g Pine Nuts
Mixed salad leaves (equivalent of 1 lettuce head)
Method
Peel butternut and remove seeds
Cut into bite-sized pieces
Place pieces into microwaveable dish and cover with salted water
Cook on high until tender
Drain
Place pieces on a baking tray and drizzle with olive oil
Scatter the onion over the butternut pieces
Roast in the oven at 180°C and then set aside to cool
Use the same tray to bake the bacon and pine nuts (until pine nuts are golden)
Assemble with leaves at the bottom and the rest arranged on top
Dress with either Honey & Mayonnaise Dressing or Balsamic & Basil Dressing
