Butternut, Bacon and Pine Nut Salad

Ingredients
  • 1 Butternut

  • 2 Red Onions, peeled and cut into wedges

  • 125g Bacon

  • 60g Pine Nuts

  • Mixed salad leaves (equivalent of 1 lettuce head)

Method
  • Peel butternut and remove seeds

  • Cut into bite-sized pieces

  • Place pieces into microwaveable dish and cover with salted water

  • Cook on high until tender

  • Drain

  • Place pieces on a baking tray and drizzle with olive oil

  • Scatter the onion over the butternut pieces

  • Roast in the oven at 180°C and then set aside to cool

  • Use the same tray to bake the bacon and pine nuts (until pine nuts are golden)

  • Assemble with leaves at the bottom and the rest arranged on top

  • Dress with either Honey & Mayonnaise Dressing or Balsamic & Basil Dressing
