Chocolate Mousse

Ingredients
175g Dark Chocolate
50ml Brandy
4 Egg Whites
120g Castor Sugar
Grated peel from 1 Orange (from original recipe, but we tend to leave this out)
Method
Melt chocolate in a bain marie
Beat in brandy and orange peel until smooth
Whisk egg whites
Add sugar and whisk further
Fold in chocolate
Chill before serving
