Coconut Fish with Saffron Rice

First tried when we were staying at the Kochs in 2006 with Gretchen & Melissa
Ingredients
1 Onion, finely chopped
3 Garlic cloves, finely chopped
30ml Butter
1 tsp ground Turmeric
½ tsp Chilli Powder
Salt
½ tsp ground Coriander
425ml Coconut Milk
800g Fish fillet
50g Raisins
Coriander leaves to garnish
Method
Sweat onion & garlic in butter
Add spices & sweat for short time
Add coconut milk & raisins, bring to boil & simmer, uncovered, for 10 minutes
Add fish & simmer further 8 minutes
Serve on Basmati rice with saffron and sprinkle with chopped coriander
