Crab Cakes

Ingredients
  • 450g Crab Meat (if tinned, squeeze out all moisture)

  • 1 Red Pepper

  • 1 Yellow Pepper

  • ½ medium Red Onion

  • ¾ cup ground water biscuits (or 1 cup bread crumbs)

  • Juice of 1 Lemon

  • 1½ tbsp Dijon Mustard

  • Salt & Pepper to taste

  • Cayenne Pepper or Tabasco to taste

  • Old Bay to taste*

  • ¾-1 cup Mayonnaise

  • ¼ cup Chives, chopped

  • ¼ cup Parsley, chopped

Method
  1. Cut peppers & onion into small dice and sauté until just soft

  2. Season with salt & pepper and let cool

  3. Mix crab meat with sautéed onions, peppers, chives and parsley

  4. Fold together lemon juice, mayonnaise, mustard and crackers/crumbs

  5. Add to crab meat mixture

  6. Season with salt, pepper, old bay and cayenne/Tabasco

  7. Mold into desired cake size

  8. Lightly dust in flour

  9. Pan fry until golden brown and warm through

* Old Bay is an American herb mix consisting of Celery Salt, Paprika, Mustard, Red Pepper, Bay Leaves, Cloves, Allspice, Ginger, Mace, Cardamom and Cinnamon
