Green Fig Preserve

Janet's Green Fig Preserve

Ingredients
Fig preparation (day 1)

  • 100 firm, green, slightly swollen figs

  • 1 tsp bicarb of soda

  • 5 ltr water


Fig preserve (day 2)

  • 6 young fig leaves

  • 10 cups sugar

  • 10 cups water

  • 1 tsp cream of tartar

Method
Fig preparation (day 1)

  • Wash, prick and make a small cross at the base of each fig

  • Mix the bicarb into the water, add the figs and leave to soak overnight


Fig preserve (day 2)

  • Wash the figs well in cold water and place into a large pot

  • Cover with water and add 3 of the fig leaves

  • Bring to the boil and simmer for 10 minutes

  • Remove the figs and place them into very cold (iced) water, throw away the fig leaves

  • Make the syrup by boiling together the 10 cups of sugar and water

  • Keep the syrup boiling as you add the figs back into it

  • Add the remaining 3 fig leaves

  • Simmer for 3 to 5 hours or until the figs are transluscent

  • Add cream of tartar and simmer for 5 more minutes

  • Bottle in clean jars

Notes

When boiling the figs, you can add a pinch of Copper Sulphate to help keep the green colour
