Ingredients
  • 1 kg Fruit (used wild blackberries at The Old Corn Mill)

  • 1 kg of Jam Sugar

  • Knob of butter

Method
  1. Place clean jars in oven at 100°C

  2. Place lids in a pot and bring to the boil for a minute

  3. Mash half the berries to a pulp

  4. Add sugar & butter

  5. Warm gently, stirring often, until sugar is dissolved

  6. Bring to the boil for 4 minutes then remove from heat

  7. Test that setting point has been reached (put a small amount of the liquid onto a cold plate, then push your finger through it. If it wrinkles then setting point has been reached). If using a thermometer, this is at about 105°C

  8. If setting point hasn't been reached then boil for another 30 seconds and test again

  9. Mix the whole berries evenly through jam and pour into warmed jars

  10. Dry off lids and seal immediately
