Katie’s Cup Cakes with Butter Icing

Makes about 40 cup cakes

Ingredients
  • 175g (250ml) butter

  • 380g sugar

  • 5 eggs

  • 360g flour

  • 10ml baking powder

  • salt

  • 5ml vanilla essence

  • 250ml milk


Icing

  • 250g Butter

  • 1kg Icing Sugar

Method
  1. Combine butter and sugar till soft

  2. Add eggs, milk and then all the other ingredients

  3. Mix well

  4. Pop into cupcake holders and into the oven at 180°C for about 20 to 25 minutes (keep an eye on them to see when they start to brown). If you use the recipe to make a single cake, then bake for 30 - 40 minutes.


Icing

  1. Wait until cakes have cooled

  2. Beat butter & sugar together well

  3. Apply
