Norwegian Cucumber Salad (Agurksalat)

Classic norwegian side dish, a little sweet, a little sour, and very fresh. They cut right through rich dishes and enhance the meal. Particularly good with oily fish.

Ingredients
  • 2 Cucumbers

  • 2 tbsp Vinegar

  • ½ tbsp Sugar

  • ½ tsp White Pepper

  • ½ tsp Salt

Method
  1. Slice the cucumber in very thin slices (Mandolin makes quick work of this)

  2. Mix all dressing ingredients together

  3. Pour the mixture over the cucumber slices

  4. This salad is great fresh but is traditionally left to cure for a few hours.

Notes

Tried this in Norway (Aug 2004) as a traditional Norwegian accompaniment to fried mackerel with new potatoes (made by Rachel)
