Pecan Nut Cookies
from Shayne's kitchen (October 2008 Harare/Zambezi trip)

Ingredients
120g (120ml) Butter
120ml Icing Sugar, sifted
8ml Vanilla Essence
80ml Pecan Nuts, chopped
250ml Flour
Whole Pecan Nuts for topping
Method
Beat together butter and sugar until light & fluffy
Mix in vanilla and nuts
Mix in flour little by little
Roll dough into teaspoon sized balls
Place on a greased/lined baking tray and push a whole pecan nut into the top of each
Bake in a preheated oven at 180°C for 10 minutes
