Pecan Nut Cookies

from Shayne's kitchen (October 2008 Harare/Zambezi trip)

Ingredients
  • 120g (120ml) Butter

  • 120ml Icing Sugar, sifted

  • 8ml Vanilla Essence

  • 80ml Pecan Nuts, chopped

  • 250ml Flour

  • Whole Pecan Nuts for topping

Method
  1. Beat together butter and sugar until light & fluffy

  2. Mix in vanilla and nuts

  3. Mix in flour little by little

  4. Roll dough into teaspoon sized balls

  5. Place on a greased/lined baking tray and push a whole pecan nut into the top of each

  6. Bake in a preheated oven at 180°C for 10 minutes
