Red Pepper Purée

Ingredients
  • 1 Red Pepper, grilled, peeled & seeds removed

  • 4 mild piquant Peppers

  • 125ml Mayonnaise

  • 10ml Lemon Juice

  • 10ml fresh dill, chopped (or loads if you like it)

  • 80ml plain Yoghurt

  • Salt & Pepper to taste

Method
  1. Dry pepper well, place in blender with all remaining ingredients except yoghurt & seasoning

  2. Blend until smooth, stir in yoghurt and season

  3. Keep refrigerated until required
