Brown Butter & Sea Salt Chocolate Chip Cookies

Sabine baked these delicious treats for us in December 2023. They were great and we're waiting for the next installment.

Ingredients
  • 240g Butter

  • 280g Flour

  • 200g Dark Brown Sugar (Original recipe had 330g)

  • 50g regular Sugar

  • 1 tsp Baking Soda (Bi-carb)

  • 0.5 tsp Salt for dough

  • 0.5 tsp Salt flakes for sprinkling

  • 75g Caster Sugar

  • 2 Eggs

  • 2 tsp Vanilla Essence

  • 1 tbsp Greek Yoghurt (? try without)

  • 100 - 200g Chocolate chips (Sabine Dark Bournville chocolate)

Method
  1. Melt butter in a saucepan over medium heat.

  2. When the butter begins to foam, whisk consistently.

  3. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan.

  4. Continue to whisk and remove from heat as soon as the butter begins to give off a nutty aroma.

  5. Immediately transfer the butter to another bowl to prevent burning and set aside to cool for a few minutes.

  6. In another bowl, whisk together the flour, baking soda, and salt and set aside.

  7. Use a stand mixer to beat butter and sugars thoroughly.

  8. Continue beating in eggs, vanilla and yoghurt.

  9. On a low setting, mix in the dry ingredients a little at a time.

  10. Remove from the stand mixer and stir in chocolate chips.

  11. Cover and chill for an hour or two.

  12. Scoop onto tray, sprinkle with salt flakes and bake at 180°C for 8 to 10 minutes.

  13. Allow to cool for a few minutes and then transfer to a wire rack to cool completely.
