Sago Pudding

Ingredients
1 cup/250g Sago balls
1 litre Milk
2 tbsp Sugar
1/4 tsp Salt
2 tbsp Butter
1 tsp Cinammon
1 tsp Vanilla Essence
2 Eggs, beaten
Method
Soak sago in milk for at least one hour
Add all ingredients except eggs
Heat on high, stirring constantly (I did this on the stove but try microwave)
When sago comes to the boil, turn heat to lowest setting and simmer until cooked through
Remove from heat and quickly whisk egg into mixture
Serve with maple syrup or demerara sugar and a bit of cream if its around
