Tomato Ketchup
adapted from Inspired Taste's recipe

Seriously Good Homemade Ketchup Recipe
Ingredients
1 tablespoon olive oil
1 medium onion, sliced
2 garlic cloves, chopped
3cm piece of ginger, peeled and chopped
1 red chilli
¼ teaspoon ground allspice
2 tablespoons tomato paste
3 cups fresh tomatoes, chopped
¼ cup packed brown sugar
¼ cup apple cider vinegar
Salt and fresh ground black pepper
Method
Fry onions in oil over medium heat until they are softened and lightly browned, about 8 minutes.
Add the garlic, ginger, chilli and allspice then cook, stirring often, for 2 minutes.
Add the tomato paste and cook, stirring often, until it turns from red to a burnt orange color, about 2 minutes.
Add fresh tomatoes, sugar, cider vinegar, a generous pinch of salt and black pepper to taste.
Stir then bring to a simmer, reduce the heat slightly and cook at a low simmer, stirring occasionally, until thickened and shiny, about 20 minutes.
Taste then adjust with more salt or pepper.
Blend until smooth.
Can be refrigerated up to one month.
